X Buscasetas Journeys 2011

Boletus edulis cream, artichoke, green asparagus and “picatoste” (fried bread cubes).

Arugula coca, wild mushrooms, mushroom of Thistle and quail egg (Lacatirus deliciosus, Pleurotus eryngii)

Scallop with grilled “elver from the mountain” (Cantharellus lutescens).

Stewed iberic pork cheek with “Prieto Picudo” (red wine), snowball (Agaricus arvensis) and boletus  (Boletus pinophilus).

Raspberry mid-cold, biscuit dust and “Rebozuelo” (Cantharellus cibarius) toffee.

This menu will only be served with the full table and wine is not included. Price: 35 EUROS per person.
